Hi guys! I’m super excited about this post. I’ve been combing the web for the very best in quick, plant-based dinners. A lot of people are under the impression that eating healthy has to be a time consuming ordeal. While it does take more effort to prepare an actual meal than it does to stop at fast food, or pop in a TV dinner, the benefits are so worth it! This collection of recipes from some very talented food bloggers will help you put some amazing, healthy food on your table this week, in 45 minutes or less. Your body, your family, and your wallet will thank you! Another bonus to making dinner at home, is that sometimes you have leftovers for lunch the next day! Yay! Most of these recipes are naturally gluten free, and if not they have gluten free options. My mission with this blog is to help as many people as I can, to learn to eat healthfully and to feel supported when making a dietary transition. 1. Stuffed Summer Squash
This recipe recently appeared on my blog, and it is one of my very favorite quick and easy meals. If you can’t get Summer Squash, or if you’d rather, this recipe works with zucchini or bell peppers!
2. Mushroom-Walnut Meatless Loaf w/ Ketchup Glaze
I saw this recipe on Pinterest a while ago and I just thought it looked so amazing! I can’t wait to try it! Do you follow me on Pinterest? You should! I connect with a lot of other vegan bloggers on there and that means I come across A LOT awesome recipes, and I love sharing them!
3. Lo Mein Soba Noodles
You guys!! How great do these Noodles look? You can easily make this into a GF recipe by using your noodle of choice. Richa recommends gluten free buckwheat noodles.
4. Green Power Bowl
This recipe had me at Collard Greens, but then POTATOES!!! I think this would also be delicious with sweet potatoes!
5. Pulled ‘Pork’ Tacos
Have you tried Jackfruit yet? It’s amazingly meat-like and can be flavored so many different ways. Look at these awesome wraps! Gluten Free? Use corn tortillas!
6. Sticky Chili Ginger Tofu
This recipe only takes 25 minutes to make, and looks so delish! Pretty photos in this post too!

Confession – I’ve never had Pho, but one look at this recipe, and I know that it’s going to be amazing! This incredible bowl of soup can be on your table in just 30 minutes, perfect recipe for my first Pho adventure!
9. Farmer’s Market Salad with Creamy Lemon Dill Dressing
I just love a meal like this, full of energy, bursting with tangy flavor, satisfying, yet light. Make extra for lunch the next day!
10. Spaghetti with Bean Balls
This recipe can easily be made gluten free by subbing the soy sauce for tamari (or GF soy sauce) and using a GF pasta, that’s it! These amazing bean balls look so much like the real thing, it’s incredible. Can’t wait to try this one!
11. Chickpea Crepes with Italian Vegetables
Have you tried Chickpea Crepes before? I LOVE them! They are so easy to make and can be flavored and stuffed in so many different ways! This yummy recipe gives them an Italian Flavor – YUM!
12. Portabello Broccoli ‘Beef’
This recipe is one of the most popular recipes on my blog, and one of my favorites! It tastes just like take out, but it takes even less time than going for take out, and is way healthier! Savory, chewy, smoky portabello mushrooms fill in amazingly well for beef in this traditional recipe.
13. Fully Loaded Falafel Pita
Isn’t this just a beautiful photo? Oh, and the recipe… sounds so great too! For you fellow GF peeps out there, I would recommend making this recipe and just wrapping it in a rice tortilla. Do you guys miss pita bread too? Now gluten free pita bread is on my blog bucket list!! 😉
14. Yummiest Fresh Avocado Pesto Pizza
It’s gluten free y’all and only 20 minutes to prepare. Yes, please!! Anyone else completely in LOVE with avocados? This pizza is loaded with them. I want it NOW!!
15. Taco Soup
This recipe is packed with protein from quinoa and black beans, and has all of the yummy flavors of tacos. Best of all, this satisfying soup can be made in about 30 minutes!
16. Baked Rosemary Chickpea Patties w/ Creamy Avocado Dressing
These patties look amazing, and I bet that Creamy Avocado Dressing is good on SOOOOO many things!!
17. Sloppy Lentil Sandwiches
I would recommend making these ASAP! Schar Bakery has amazing little, gluten-free, ciabatta rolls that would work great for this recipe! Sometimes I can find them in the supermarket, and sometimes I order from the company and freeze them. Either way, I have plans for these sandwiches! You can also get them on Amazon.
18. Vegan Bibimbap
‘Bibimbap’ is a Korean word for ‘mixed rice’, and in this case, the rice is mixed with a lot of yummy stuff! Tofu, veggies, and spices to be more specific. The pictures of this recipe seriously have me so hungry!!! Make this, and then you can impress your friends when they ask you what you’re eating, and you just say ‘bibimbap’, like ‘you don’t even eat bibimbap?’

20. Vegan Mushroom Philly Cheese Sandwich
OMG! Really, it’s hard to believe that with so many incredible recipes out there (like this one!) that anyone would think that eating plant based meals is hard, or makes you feel deprived! Make the Gluten Free version of this by omitting the seitan and using all mushrooms, and serving on GF bread or wrapped in greens or GF tortillas like a wrap!
21. Sweet Potato Noodle Stir Fry
If there was ever a reason to break down and get one of those niffy veggie spiralizers, this would be it!
22. Best Mac and Cheese
One look at this recipe and I’m pretty sure it’s gonna live up to it’s name! Throw together a salad or some steamed veggie with this and call it dinner! Done and Done!
