Whaaat?! Yeah, you read that right… this is a Vegan Turkey Roll, and it’s gluten free too! This is one of my absolute favorite recipes, and I’ve been making this Vegan Turkey Roll for my family, friends, students, and clients for over 20 years! Many people prefer this to store bought tofu or seitan ‘turkey’, as the texture is more pleasing (it’s not chewy or spongy). When I went gluten-free in 2012, I filled this with gluten free stuffing, and it’s still just as good (no one even noticed!) If you aren’t gluten free, you can stuff this with any vegan stuffing. So what is this? What we’re talking about here is well seasoned, firm tofu rolled around stuffing (gluten free if needed), baked till firm, sliced and served with gravy. This vegan turkey roll makes a beautiful centerpiece for a main course, and no one will miss the bird! You can also make this in advance and refrigerate or even freeze it and just warm it up when it’s time. Acai Berry Smoothie Bowl
A few months ago, my family and I traveled up the coast to the tiny little beach town of Avila Beach, Ca. It’s an adorable little town, and I wrote a post about our trip here. While we were there, we visited a great little smoothie shop, and the bowls that we had there totally inspired me to make my own version! I have been making them almost every morning, in some variation, since we got back! I adore smoothies for breakfast and rarely eat anything other than that, so I was happy to add these delicious Acai Berry Smoothie Bowls to the repertoire! Navigating social gatherings and holidays as a vegan (or gluten free person) can be a challenge sometimes. Halloween is definitely one of those times, especially when you have kids! As a parent, you want your kids to enjoy all of the fun things about being a kid, and you also want them to be as carefree as possible. I’m a mom of two boys, who are 13 and 6, and both have been vegan since birth. I try to make it as easy as possible for them to feel included in social situations by bringing food to gatherings that is a vegan version of what everyone else is having. (Most kids parties have pizza and cake, so I bring a vegan pizza and some vegan cupcakes, and the kids are so busy being kids, no one ever cares that my kids are eating something different – they’re just busy being kids. It’s more of a Mom thing to be concerned about this!) If it’s a potluck situation it’s a great opportunity to bring something that is familiar to non-vegans. If you do a good job of it, most people will never even notice that it is vegan or gluten free, and because so many people are either vegan curious, or know someone who is vegan, you’ll find that most are very open to trying vegan or gluten free options. When it comes to Halloween candy, there are some candies that are ‘accidentally vegan’, not necessarily healthy, but don’t contain animal products. Thankfully, there are also some great candy options from companies that make all natural, vegan treats (with many gluten free options as well!). Vegan Chocolate Swiss Meringue Buttercream Frosting
It sounds to good to be true, I know, but here is the proof! Creamy, all natural, Vegan Chocolate Swiss Meringue Buttercream does exist! Thanks to the amazing discovery of Aquafaba (literally “bean water”, from a can of beans), all kinds of wonderful things that used to require egg whites are now possible! This Vegan Swiss Meringue Buttercream is one of those things! This icing is like heaven on Earth, on your cake. Seriously! It is light, fluffy, and melts in your mouth. Hi guys! How’s your week going? Did you happen to check in here last week? I added my first travel post to this blog! If you haven’t seen it yet, check it out here. I travel with my family in an RV, and we like to camp, so sometimes it’s a quick trip and sometimes it’s an epic journey.
