As a food blogger, I see A LOT of smoothies on the internet, and right now, smoothie bowls are all the rage. Not really a new concept, just a new way to do things. Basically a smoothie bowl, is a smoothie that is thick enough to eat with a spoon, and because it’s in a bowl, instead of in a cup, you can really get creative with your toppings. Smoothie bowls are a delicious and beautiful way to eat your fruit, and include some other filling ingredients to make it more of a meal. This Peach Banana Berry Smoothie is really satisfying in all of the above mentioned ways!
Quick change of subject…. last week, my computer died. Not fun, and to make matters worse, I had it only semi backed up. So, public service announcement time… Make sure you have your stuff backed up, especially your photos, and especially if you are a photographer! Duh, right?! (Do it now!!) Yeah. There were a few days where I was holding my breath, waiting to see if my photos could be rescued. By a miracle, my files were retrievable, but unfortunately, my laptop is now deceased. I am REALLY, super thankful to have all of my photos back, safe and sound, and that’s an understatement! So, now I’m laptop shopping. Any suggestions? Seriously, I hate picking out this kind of thing! If I won the lottery, I mean, WHEN I win the lottery (positive thinking in action there), I will just ask my assistant to go get things like this for me, and I won’t have to learn all about gigabytes and processors and all of that other stuff! Just get me something that works, and I can I just want to get back to taking pictures and making yummy food! So when my sister messaged me and said that she had just bought a big container of protein powder and did I have any new smoothie recipes, AND my neighbor happened to bring over two big bags full of fruit from his very prolific fruit trees, I knew what I had to do! The key to making a great smoothie bowl, is to make it thick enough that you can eat it with a spoon. The best way to do this is to only add a couple of tablespoons of liquid. In this case, I used my favorite non-dairy milk, which is So Delicious Unsweetened Vanilla Coconut Milk.
This smoothie is a great breakfast, and a really nice pick me up snack or meal on warm days, when you just feel like eating something light and refreshing, yet filling. You can customize your topping, and add whatever you like! The combinations are endless. Making this reminded of when I worked at a frozen yogurt shop as a teenager, and we had giant array of toppings, and you could make so make so many different varieties. (My fav was Strawberry yogurt with crumbled peanut butter cups – SO GOOD. I might have to come up with a vegan version of this… now you guys have me day dreaming about toppings… ) I’m easily distracted. - ⅓ C frozen or fresh blueberries
- 1 large peach or about 5 slices of frozen peaches
- 1 large banana
- 2 Tablespoons Unsweetened Vanilla Coconut Milk (such as So Delicious Dairy Free)
- 12 ice cubes
- ½ to 1 scoop vanilla protein powder (depending on your tastes)
- Toppings - I used Gluten Free granola, blueberries and pumpkin seeds
- In a blender, combine peaches, bananas, blueberries, ice, protein powder, and coconut milk. Process on high until completely smooth. Smoothie should be really thick. You may have to stop the blender and scrape the sides down with a spatula and then do a little more blending. Pour into a bowl when finished, and top with coconut flakes, pumpkin seeds, granola, or topping of your choice. Enjoy!
- *If your smoothie is too thick, add a tiny, tiny bit more milk, and if it is too thin, add some extra ice or fruit.
